super simple muffin tops

i don’t know about you, (if you’re singing “22” by taylor swift now, you’re welcome ;)) but i’ve always liked the tops of muffins SO much more than the bottoms. up until a couple months ago, i never even thought about the possibility of being able to make just muffin tops. until i was watching an episode of gilmore girls and someone mentioned something about muffin tops and i was like “wait. i need to google this.” so i did some research and you can indeed make muffin tops! THEY EVEN MAKE MUFFIN TOP PANS. yeah. it’s a thing. so, i obviously had to try these out, and i thought why not make a blog post on it? you can find the recipe below, as well as a link to the recipe i used from betty crocker, if you’d like to make them for yourself. which, i mean, i don’t see why you wouldn’t. they’re delicious. and the recipe is so simple, it literally took me about 30 minutes to complete, and that’s because i had to use two cookie sheets (you can use a cookie sheet if you don’t have a muffin top pan, or are poor like me and don’t want to go out and buy one). i chose this recipe because i already had everything needed, but i’m always up for trying more complicated recipes. so if there’s anything (whatever difficulty) you’d like to see me make/attempt, let me know and i’ll be more than happy to give it a try! i also have a youtube channel you can visit here, so let me know if you’d like to see some baking (or cooking) videos as well! okay now go make those muffin tops because they are seriously SO FREAKING GOOD. :)

you will need:

  • 1 package betty crocker wild blueberry muffin mix
  • 1/2 cup water
  • 3 tbsp vegetable oil
  • 1 egg
  • 1 cookie dough scoop (optional)
  • cookie sheet(s)/muffin top pan

preheat oven to 425°F. drain, rinse, and set aside blueberries. stir together muffin mix, water, oil, and egg in medium bowl until blended, then gently add the blueberries. back 7-9 minutes (9 worked for me) until edges and tops are golden brown. let cool and enjoy!
